Rain, rain go away! I’m too cold to deal with this shit today…
It’s been raining A LOT lately. So my hubby has been making warm food on the reg which also means sweaters, cuddles and comfort food! I can’t remember the last time I have had beef stroganoff and neither could my hubby. So this was a fun surprise to remember how amazing warm comfort food is on a cold rainy gray day!
Warm yummy food is always a cure to rainy and shitty day blues.
FROM THE CHEF:
1 beef roast around 2 lbs, cut into strips
1 yellow onion, sliced
1 clove garlic, minced
8 oz white mushrooms, sliced
1 ½ cups beef broth
2 Tbsp Dijon mustard
1 Tbsp Worchestire sauce
2 Tbsp salt
½ Tsp fresh ground pepper
2 Tbsp cornstarch
6 oz cream cheese
¾ cup sour cream
¼ fresh chopped parsley
1 16 oz package egg noodles cooked according to the bag
- Add the beef, onion, garlic, and mushroom to the slow cooker.
- Mix 1 cup of the broth, Worchestire sauce, Dijon mustard, salt and pepper. Add to the slow cooker and cook on high for 5 hours.
- After 5 hours combine the cornstarch with ½ cup broth. Add it to the slow cooker and stir to combine. Cook another 20 minutes.
- Add the cream cheese, stir until it has melted and combined. Add the sour cream and parsley. Stir to combine. Serve over your egg noodles.
