Rain Sucks Beef Stroganoff Doesn’t

Rain, rain go away! I’m too cold to deal with this shit today…

It’s been raining A LOT lately. So my hubby has been making warm food on the reg which also means sweaters, cuddles and comfort food! I can’t remember the last time I have had beef stroganoff and neither could my hubby. So this was a fun surprise to remember how amazing warm comfort food is on a cold rainy gray day!

Warm yummy food is always a cure to rainy and shitty day blues.

FROM THE CHEF:

Beef Stroganoff

Ingredients

1 beef roast around 2 lbs, cut into strips

1 yellow onion, sliced

1 clove garlic, minced

8 oz white mushrooms, sliced

1 ½ cups beef broth

2 Tbsp Dijon mustard

1 Tbsp Worchestire sauce

2 Tbsp salt

½ Tsp fresh ground pepper

2 Tbsp cornstarch

6 oz cream cheese

¾ cup sour cream

¼ fresh chopped parsley

1 16 oz package egg noodles cooked according to the bag

  1. Add the beef, onion, garlic, and mushroom to the slow cooker.
  2. Mix 1 cup of the broth, Worchestire sauce, Dijon mustard, salt and pepper. Add to the slow cooker and cook on high for 5 hours.
  3. After 5 hours combine the cornstarch with ½ cup broth. Add it to the slow cooker and stir to combine. Cook another 20 minutes.
  4. Add the cream cheese, stir until it has melted and combined. Add the sour cream and parsley. Stir to combine. Serve over your egg noodles.
